How Long to Air Fry Goodfella’s Pizza — And Why You’ve Been Doing It Wrong

Pulling a Goodfella’s pizza out of the freezer at midnight and knowing that dinner, or whatever you’re calling it at that hour, is less than fifteen minutes away has a subtly satisfying quality. Technically, the oven method has always been successful. However, anyone who has stood in a kitchen at 11 p.m. while waiting for a traditional oven to perform its sluggish, uncaring task understands how it feels. That equation was significantly altered by the air fryer.

The official instructions from Goodfella’s are fairly simple: cook two Pizza Pockets for 10 to 12 minutes, turning them over halfway through, after preheating the air fryer to 180°C for about three and a half minutes. That’s all. That’s the entire approach. However, the details in those instructions are more important than they seem, and omitting any one of them will result in a disappointing outcome: either an overcrisped edge with a filling that tastes vaguely reheated rather than freshly cooked, or a soggy center that hasn’t quite caught up.

The majority of people omit the preheating step. It doesn’t seem necessary. Why wait when the air fryer is already there? However, if the food isn’t heated for three and a half minutes, the heat is distributed unevenly, and the pockets may end up steaming instead of crisping. As soon as you begin properly preheating, you will notice a difference in texture. The exterior snaps a little. There’s a certain molten quality to the cheese inside. It’s a minor detail that has a significant impact.

The filling of Goodfella’s Pepperoni Pizza Pockets, which consists of mozzarella, Edam, and smoked pepperoni, retains a lot of heat once it reaches room temperature. This is made very clear in the brand’s own packaging, and it’s not just legalese. The fillings become really hot. It’s not optional fussiness to let the pockets stand for a full minute after cooking; it’s a way to prevent burning your mouth on molten cheese at 11 p.m., which is worse than having to wait.

Newly introduced at Iceland and Ocado, Goodfella’s deli-style pizza slices operate on a completely different timeline. These thin, New York-style slices, which come in Margherita and Pepperoni varieties, only require four minutes at 180°C in the air fryer. Four minutes.

Compared to most people’s kettles, that is faster. Under circulating heat, the thin stone-baked base is intended to crisp quickly, and it does. The question of whether the £2.50 price tag is reasonable for a single slice is a different one that appears to be going on quite a bit on Instagram right now, with customers pointing out that you can get an entire Iceland own-brand pizza for £1. However, it is difficult to dispute the cook’s speed and quality.

A different method is used when preparing a typical frozen Goodfella’s pizza, such as the deep pans, stone-baked thins, or anything larger. Since most air fryers won’t fit these whole, it makes sense to slice them first. Slices of thin crust typically require five to six minutes at 180°C. If your basket is large enough, a full mini-sized pizza takes six to eight minutes to prepare. This works so well because of the heat that circulates beneath the base, giving the crust a crispness that is rarely found in an oven on a flat tray.

It’s still unclear if the majority of consumers are preparing their Goodfellas according to the brand’s instructions. Contrary to what social media suggests, there is a good deal of improvised timing going around, with people experimenting at temperatures ranging from 160°C to 200°C with differing outcomes. Rushing it by raising the temperature tends to result in a burned edge before the filling has completely heated through. The sweet spot is actually located at 180°C. Here, patience pays off, at least relative patience.

The reasons behind air frying: Although the time savings are significant, Goodfella’s superiority over the oven goes beyond speed. It’s the regularity. The base crisps uniformly throughout. The cheese properly sets and bubbles. Additionally, very little attention is needed during the entire process. Insert it, give it one turn, and then leave it for a minute. That’s an incredibly easy way to get something that tastes much better than what the packaging would suggest.

There has always been a stigma associated with frozen pizza; it’s the go-to meal, the admission you half-apologize for. However, a Goodfella’s Pizza Pocket from an air fryer is truly delicious when prepared correctly and at the appropriate time. Not a good restaurant. However, it’s good enough that reaching for the freezer instead of using the delivery app begins to seem like a sensible decision rather than a defeat.
