It’s obvious that the conventional weight gain advice—eat more, eat bigger, eat everything—was written by someone who has never sat in front of a plate of food, felt truly full after four bites, and been told to keep going. That strategy doesn’t simply work for people with small appetites. The bloated, uncomfortable feeling of having forced down more food than the body wanted, followed by hours of not being hungry at all, and then missing the next meal completely, are the typical symptoms of this type of misery. The excess calories that were meant to build up never do.

The more successful method begins with a completely different question. It asks how to get more calories from what you already eat, as well as when and how to eat it so that your appetite works in your favor rather than against you, rather than how to eat more. The solution, which was developed through clinical nutrition practice and validated by dietitians at NHS trusts, sports medicine clinics, and oncology units where patients must gain weight under challenging circumstances, consists of a few structural adjustments that are far less taxing than requiring three substantial meals per day.

The first shift is the frequency of meals. Eating every two to three hours, or five or six small meals a day instead of three large ones, affects the body’s relationship to food in a particular way. It prevents long intervals that allow appetite to completely vanish, keeps the digestive system constantly active, and spreads the caloric load over several eating occasions so that no single meal requires a significant amount of food. 300 to 400 calories can frequently be consumed at a sitting without causing discomfort for someone with a small appetite. The total for the day is significant across six of those. That same individual may consume 800 calories over the course of three substantial meals before giving up. When the appetite is naturally low, hunger cues alone cannot be trusted, and most people who struggle with this find that scheduled eating with a reminder works better than waiting to feel hungry. The math is simple, but the habit requires preparation.

The true leverage is in the second shift, which is toward caloric density. A tablespoon of olive oil adds very little to the volume of a meal and has about 126 calories. Almond butter fits inconspicuously into a bowl of oatmeal and has almost 100 calories per tablespoon. Without significantly altering the amount of food on the plate, adding two tablespoons of chia seeds to yogurt adds about 140 calories. When you are already getting close to the limit of what your stomach can comfortably hold, full-fat dairy products, such as whole milk, Greek yogurt, and aged cheese, provide a lot more calories per gram than their reduced-fat counterparts. It doesn’t feel like eating more to have dried fruit instead of fresh, seeds scattered all over the place, or olive oil drizzled over veggies that were already going to be consumed. They simply eat in different ways.

Liquids should be taken into account separately. Liquid calories are processed differently by the body than solid ones; they pass through the digestive tract more quickly, cause less physical stretching in the stomach, and less strongly induce satiety signals. A well-made smoothie, consisting of whole milk, a banana, two tablespoons of peanut butter, a handful of oats, and a scoop of protein powder, can provide 600 to 700 calories in five minutes and leave the user feeling more than satisfied. For those who frequently undereat because they fill up too quickly, it is one of the more dependable tools available. Drinking a large glass of water right before eating physically occupies stomach space and reduces how much food fits, so most people who do this well avoid water for about half an hour before sitting down to eat. This is the only timing adjustment worth making.

It’s difficult to ignore how much of the typical discussion about weight gain presumes a strong appetite and concentrates on what foods to include rather than how to make eating more controllable. After the stomach has settled from dinner, a bedtime snack of full-fat yogurt with honey and walnuts adds a real calorie contribution during the hours when the body is repairing and building tissue while you sleep. There is no need for additional hunger to make that contribution. All you need is a habit. That kind of steady, quiet accumulation over weeks and months is what really shifts the scale.

She's spent years eating her way across the UK — from roadside chippies to countryside gastropubs — and writing about what she finds there with the kind of honest enthusiasm that doesn't require a Michelin star to appreciate good food. At Friar Street Kitchen, Tiffany covers everything from everyday cooking questions and British supermarket staples to the bigger conversations happening around food, health, and how we eat. Her writing tends to start in the kitchen and end up somewhere more interesting — because that's usually where food takes you if you pay attention. When she's not testing recipes or digging into the latest food trend, she's probably debating the correct way to make a proper cup of tea.
