    A famous chef acknowledging that she ate poorly for years is almost paradoxical. Giada De Laurentiis based her entire public persona on food, including the generous drizzles of olive oil, the handmade pastas, and the rich aromas. Rather, she began modestly and gradually reduced her intake of sugar and caffeine, observing which adjustments were beneficial and which were merely inconvenient. Brown rice, roasted sweet potatoes, cauliflower, salmon, and olive oil were among the simple, everyday foods that began to improve her mood. Foods that actually contain nutrients. What about the brownies and pasta that had been there all the time? She significantly reduced those.

    What’s intriguing—and perhaps a little surprising—is how her daily meal plan changed over time. Giada switched to four smaller meals spaced throughout the day instead of the typical three-meals-a-day routine that most people follow without question. Each and every one of them has protein. That’s not a coincidence. As she enters the Dancing With the Stars ballroom for Season 35, she has talked about aiming for between 80 and 100 grams of protein per day to support her body at her current stage of life. She is firmly in her mid-50s and about as physically active as she has ever been in public. Espresso and willpower are not enough to get through demanding rehearsals.

    In this new structure, breakfast usually revolves around oatmeal—steady, dependable fuel rather than anything flashy. It’s quite different from the decadent spreads she’s become well-known for on TV, and there’s something genuine about that difference. There are differences between the food she prepares for audiences and the food she actually consumes to feel better. If asked, the majority of professional chefs would likely acknowledge the same.

    In her book Eat Better, Feel Better: My Recipes for Wellness and Healing, Inside and Out, she detailed a version of her methodology that included both recipes and the reasoning behind the modifications. Writing it might have strengthened her own dedication to those changes because putting something into words compels you to mean it. People were genuinely shocked that a chef of her caliber was admitting to making mistakes for so long, which contributed to the book’s popularity.

    Observing Giada’s trajectory over the past few years gives me the impression that her story speaks to something more general than celebrity dieting.
