These recipes aren’t new. Weeknight staples are prepared in a sealed ceramic pot while people sit through evening commutes, work calls, and school runs.

    A certain generosity of flavor that only develops with time is a commonality among the best slow cooker dinners. The results of simmering a ham hock in a broth with black-eyed peas for eight hours are completely different from those of rushing the same ingredients through a pressure cooker. Collagen degrades differently. The fat renders at its own speed. The entire process takes on a softness that is impossible to rush. This could be the reason why slow cooker food always tastes like something made by someone’s grandmother—not because it’s outdated, but rather because patience still accomplishes what heat and speed can’t.

Because they are the cuts that benefit from prolonged, gentle cooking, slow cooker recipes typically favor less expensive cuts like chuck, shoulder, shin, and hocks. What was once tough and cheap becomes truly tender as the tissue degrades and the collagen transforms into gelatin. This is more important than the food media may freely admit during a time when grocery bills seem more unmanageable than they once were.

    Whether slow cookers will ever completely reclaim the cultural moment they had prior to the Instant Pot’s arrival and its emphasis on speed is still up for debate. However, there’s a sense that the slow cooker was never truly competing with speed when you see how the recipe collections expand and how many home cooks return to them. The unique satisfaction of a dinner that cooked itself while you were occupied with the rest of your day was something it consistently offered.
